Have you ever gone out to eat with me? I am that person who wants to taste everything on everyone’s plate. Just a taste. If I were in prison my last meal would be: a slice of bruschetta, one or two pita triangles with artichoke dip, a tiny crispy crab cake with a bit of remoulade, one of those cocktail meatballs with the grape jelly and chili sauce, some really killer salsa with fresh cilantro, a tiny triangle of spanakopita, a little hummus, a bacon-wrapped water chestnut, a demitasse of {insert vegetable here} soup…. and maybe a hot wing.
Sometimes I just want hors d’oeuvres for dinner. Like, often.
So when my friend M came over for Downton Abbey and dinner, that is what we did. I made the fried ravioli (for the first and last time) and she made the spinach balls. So we had all 3 food groups: fried, cheesy, and wine. It was excellent.
I’m not going to tell you how to make fried ravioli. Don’t do it; i’s not worth it. A lot of mess for a greasy pile of Meh. You can do better. The spinach balls on the other hand, are worth getting your hands dirty for.
Spinach balls recipe:
2 packages of frozen chopped spinach (10 oz), thawed and well drained
2 cups Pepperidge Farm herb stuffing mix
1 onion, diced and sautéed
1-2 cloves minced garlic
3/4 cup parmesan cheese
3 eggs, beaten
Thyme
Salt, pepper
1/2 cup melted butter (and not anything that’s not butter, I got my rules, you know)
Mix together thoroughly. Form into small balls. Bake at 425 for 20 minutes.

I have been on an hors d’oeuvres-for-every-meal kick. You have the best ideas.

What do you do for breakfast hors d’oeuvres? French toast sticks? Harkening back to the dorm-cafeteria days?
